Jalapeño

The jalapeño is a medium-hot chili variety from Mexico that is harvested green and used worldwide as a vegetable and spice. Its heat is well above that of a bell pepper, but far below that of varieties like the habanero.

The jalapeño is a variety of chili, meaning a hot pepper fruit. The pods are usually five to nine centimeters long, strongly green, and thick-walled. They are normally harvested before they ripen to red. They are named after the Mexican city of Xalapa, where they were traded in earlier times. Today the jalapeño grows in many warm regions of the world, including Mexico, the USA, Spain, and China. It is considered hot but easily tolerable — making it, for many people, the entry point into spicy food.

The variety that made heat everyday-friendly

Heat is measured in Scoville units, a scale for the content of the irritant capsaicin. A jalapeño typically ranges from 2,500 to 8,000 units. An ordinary bell pepper has zero, while a habanero chili can reach up to 350,000. The jalapeño thus hits a range that almost every adult can tolerate without any training.

This is precisely what explains its economic significance. Food companies need a level of heat that doesn’t scare off customers but still delivers flavor. That’s why jalapeño appears on frozen pizzas, in nacho cheese sauces, and on burgers from major fast-food chains. In Mexico alone, several hundred thousand tons are harvested each year.

Add to that its processability. The thick walls of the pod withstand pickling, grilling, and stuffing without falling apart. Thin-walled chilis are barely suited for this and are mostly dried instead.

Why capsaicin burns even though nothing is hot

The heat comes from capsaicin, a compound the plant produces to defend against predators. Capsaicin binds to a receptor in the skin and mucous membranes that actually signals heat. The brain therefore receives a heat signal even though the temperature hasn’t changed. Heat is thus not a taste but a pain and warmth stimulus.

In the jalapeño, capsaicin sits mainly in the white inner membranes to which the seeds are attached. Removing these inner parts makes the pod noticeably milder. The seeds themselves are only affected because of their location there.

Capsaicin does not dissolve in water, but it does dissolve in fat. Drinking water only spreads it further around the mouth. Milk, yogurt, or cheese, on the other hand, actually work because their fat binds the compound. This is also why spicy dishes are often served with cream or cheese.

From the supermarket shelf to the chipotle

Most commonly, jalapeños are encountered pickled, sliced, in jars or cans. Pickling in vinegar and salt preserves them and takes away some of the heat. Fresh green pods can be found in the produce section of many supermarkets, often next to bell peppers and other peppers.

A classic of Tex-Mex cuisine is jalapeño poppers: halved pods filled with cream cheese, breaded, and deep-fried. When dried and smoked over wood smoke, the jalapeño becomes chipotle, a brown chili with a smoky aroma. Chipotle is therefore not a separate plant but a processing stage — a common misconception.

In news and product names, the word also appears as a pure marketing signal: a chip variety, a sauce line, a limited edition. What’s usually meant is simply the quality of “hot, but not extreme.” In the tech world, the name is occasionally seen as a project or server codename, since companies like to name their versions after chili varieties or place names.
